Our story

We began as a small collective of cooks who kept asking: how do you teach craft so that it survives the classroom? The answer was to break technique into reproducible modules, to document failures as part of instruction, and to keep groups small. Over ten years, the studio refined a case-study arc: identify a common error, deconstruct the process, and rehearse focused repetitions until the result is reliable. Today we run scheduled intensives and bespoke mentorships for students who want durability in their practice.

Learning process

A compact checklist that guides collaboration between instructor and participant.

  1. Intake & baseline assessment: we record your current practice.
  2. Modular drills: focused skill repetitions with immediate feedback.
  3. Timed runs: simulate service conditions to build pace and accuracy.
  4. Review & consolidation: actionable notes and a home practice plan.
